I like my food easy, simple and healthy, so I usually rotate out a few “go to” meals every few months. Right now I am in love with this one: quinoa, topped with lightly steamed veggies and dressing – here I’ve used Annie’s organic goddess dressing, and I also really love Kronfli Brothers Kale Tahini sauce.

I cook up a big batch of quinoa that I keep in the fridge, and steam up a bunch of veggies at the same time. I lightly steam the veggies so they’re still a bit crisp, thereby not cooking all the nutrients out, but still making it a bit easier to digest.

Right now I’m loving mushrooms, zucchini, carrots, broccoli and I’ll throw a handful of spinach on at the very end for just 30 seconds to wilt. It’s super easy to pile the veggies on top of the quinoa and add a tablespoon or two of dressing.

Be careful in choosing a store-bought dressing as so many are packed full of sugar. When I can I make my own lemon tahini dressing (recipe below). Hummus is also another great topping option, or sometimes I even just drizzle on a tablespoon of liquified coconut oil. What’s your fav go to meal these days?

LEMON TAHINI DRESSING

  • 1/2 c tahini
  • 2 cloves garlic
  • 4 tbsp lemon juice
  • 3-4 tbsp water
  • Salt and pepper to taste
  • Dash of dried dill

Blend until smooth in a blender or food processor. Add or subtract water depending on desired consistency. Keeps for up to a week I the fridge.
