This is one of my favorite “go-to” recipes, that is simple, quick and full of lots of nutrients. I make a big batch and eat from it throughout the week. You can also add protein or other ingredients on a “per serving” basis to switch it up.

  • 1.5 cups quinoa
  • 2 medium tomatoes, seeded and chopped
  • 6 cups spinach, loosely packed (one 6 oz. bag)
  • 4 ounces feta cheese (optional; omit if dairy-free)
  • Salt and pepper to taste

In a large saucepan, combine quinoa with 3 cups of water. Bring to a boil, reduce heat to simmer, and cook, covered, for 15 minutes or until water boils off. Remove from heat.

In the same pan, add raw spinach and mix, allowing spinach to wilt from heat. Mix in tomato and feta, and salt and pepper to taste.
