Overnight oats with chia seeds is one of my favorite, quick and easy breakfast meals, or snack choices. You can use any type of milk that you’d like (including cow or goat, however these aren’t vegan).

Ingredients

  • Equal parts milk of your choice (coconut, almond, soy, cow’s, etc.) and oats (around 1/2 – 1/3 cups of each)
  • 1 tsp chia seeds
  • 5 drops stevia
  • Sprinkle of cinnamon
  • Fresh fruit and/or nuts to garnish (optional)

Instructions

  • In a glass mason jar, combine all ingredients and stir.
  • Cover with lid and let sit for at least 5 hours.
  • Stir and add extra milk if needed for your preferred consistency, as well as additional stevia or cinnamon, and/or fresh fruit or nuts to your liking, and enjoy! (If not using dairy, this will keep for 4 days – if using dairy best to consume within 2).
